Our special line of sauces are gourmet sources of restaurant quality. In fact they appear on our world-renowned menu nightly. The sauces were designed to be added at the end of the cooking process, whether it be grilled, roasted, broiled or smoked. We call them finishing sauces because, in most case
s, they are not cooked or marinated with the food, but are added just before serving to compliment or finish the entree. Here are a few serving ideas.
APPLE CIDER BRANDY - Warm and serve with any pork dish. Peel and dice fresh apple in the sauce just before topping a grilled pork chop
or pork tenderloin...they'll think you've been cooking for hours. This one is also tasty with chicken, lamb or turkey. It's great with roasted game birds, such as duck, dove, or quail.
BOURBON VANILLA PRALINE - This is our only dessert sauce. We serve it warm over cheesecake. It is also irre
sistible over ice cream, apple pie, waffles, brownies, or even holiday sweet potatoes.
CHAMPAGNE HERB VINEGAR - This vinegar is a blend of my favorite herbs and spices-sweet basil, lemon thyme, garlic, pink peppercorns, and a fresh hot pepper. It makes any salad dressing better and any recipe calling for vinegar more flavorful.
CHIPOTLE BBQ SAUCE - In this non-traditional barbeque sauce there are lots of garlic and onions with the chipotles to bring a hot, spicy barbeque to life. Enjoy this on all kinds of grilled or smoked meats, or seafoods.
GUAVA SOUR CHERRY - We serve this with grilled venison and other game dishes. It is also excellent with duck or ham. As with our other sauces, warm and serve atop any finished meat.
MADAGASCAR PEPPERCORN SAUCE - This is our red meat steak sauce. It has lots of garlic, shallots, and burgundy, along with the peppery green Madagascar peppercorn. Serve with any steak and instantly turn it into Steak au Poivre. This hearty sauce is fabulous with game. Just warm and serve with your entree.
MANGO JALAPENO - Warm and serve with a grilled pork chop or tenderloin. It is excellent with lamb or chicken. After cooking your entree, just warm and serve the mango jalapeno. We also serve it with egg rolls, or saute shrimp in the sauce. Try topping cream cheese and crackers with this chilled sauce. Garnish with fresh mangoes for that extra touch.
MEXICAN MARIGOLD MINT HONEY MUSTARD - This makes any sandwich a special treat...or mix with honey and vinegar for a honey mustard salad dressing. Serve warned over spinach with bacon bits and chopped hard boiled egg for a tasty salad.
ORANGE GINGER BBQ SAUCE - Like the other barbeque, this is a non-traditional sauce that is both versatile and extremely flavorful. Use creatively on all meats and game birds.
STRAWBERRY/RASPBERRY SAUCE - We serve atop grilled pheasant with fresh berries sprinkled on top. There are lots of garlic, shallots, and chardonnay to give this sauce its special zing. This does wonders to baked, broiled, or grilled chicken, or to any game bird. Just warm and serve atop your favorite poultry-it's great with pork loins too.
TOMATILLO WHITE CHOCOLATE - We serve it warm over grilled, broiled, or baked fish and shrimp. It does wonders to grilled chicken, or use it to top off your favorite enchiladas or omelette. I like it chilled with tortilla chips. This is truly a versatile sauce...just use your imagination. Remember, it contains only a small amount of Belgium white chocolate. This is not a sweet sauce. Some call it a mole.
